It's no secret that I love pasta. I pray every.single.night that pasta turns out to be healthy and that when I limit myself to eating it once a week, I am truly only hurting myself. I'll let you know how that turns out. Back to the recipe! I love nothing more than an easy week night meal that takes less than 15 minutes to create. Feast your eyes below for the heavenly goodness of this delish recipe. You're welcome.
Here is the ingredient list you'll need:
12 oz fettuccine noodle (or noodle of choice)
12 oz jar of roasted red peppers
Handful of basil leaves
2 cloves of garlic
1/2 cup chicken broth
1/4 cup olive oil
Red pepper flakes
Salt and pepper
1 lb Hot Italian sausage
In a food processor, add the roasted red peppers, basil, and garlic then put on low. As this is blending, add in the chicken broth and olive oil through the top. Once blended to a creamy sauce, add in salt and pepper and red pepper flakes (as desired).
Heat the Italian sausage on a skillet until it's cooked fully.
Add the fettuccine to a boiling pan of salted water. Drain and add in the sauce over the pasta and top with Hot Italian Sausage. And...Voila! You have the easiest week night meal that ever existed (and the leftovers are just as good!)
